VIOGNIER (vee-oh-nyay)
Aromatically lavender and pollen overlying apricot and peach
Viognier can be a finicky varietal. Its thick skin causes slow ripening. If harvested too early or exposed to too much sun in order ripen, it can produce high hot alcohol wines flat in flavour. When picked in late harvest it can produce incredibly sweet wines. Viognier therefore needs specific conditions to create a wine that provides great flavour but less sweetness. When these conditions can be met, this usually sweet wine can be turned into fragrantly aromatic wine of lavender and pollen with rich but fresh steely flavours of apricot and ripe peach.
