General InformationWith lean and flaky fish of mild flavour and white colour, whose fillets are usually thin, definitely stick to white wine. With red wine, no matter how delicate, light in tannins and alcohol, you run the chance of overpowering the natural flavours of the meal. Within the scope of white wine, look towards a refreshingly acidic and citrus flavoured white wine that is light in body. With such delicate flavour inherent in such as fish, dressing and seasoning is kept simple with herbs like dill and pepper and juices like lemon and lime. A wine that pairs with these flavour accents won't disrupt the taste of the meal.
Some of these mild flavoured, lean and flaky fish include the Sea Bass, Branzino, Black Sea bass, Flounder, Perch, Porgy, Sole, Snapper, Fluke, Tilapia, Wild Striped Bass, Pollock and Haddock. In Depth PairingWhen using aromatic herbs with your fish turn to aromatic white wines. Good pairings include Gruner Veltliner which displays heavy herb and vegetal characters of tarragon, lovage and green beans. Then there is Sauvignon Blanc with vegetal and herb qualities, often that of tarragon, lovage, celery, freshly mowed grass and green peppers. Muscadet will supply you with zesty citrus flavors followed by bitteralmond after tastes. In fact, most Italian whites, Greek whites or Portuguese whites will all fit the bill of a lean, mild flavoured fish., along with a white Bordeaux, Verdejo and Chenin Blanc.
Mild flavoured fish like Striped Bass and Catfish do contain some natural fat that a dry and crisply citrus white wine, high in acidity can cut right through while complimenting any zesty seasoning the fish might have. A Wine like Pinot Grigio is well known for its citrus notes and high acidity, as is a dryer, light bodied Riesling with high acidity. Unoaked Chardonnay that hasn't been put through the MLF process will still have crisp essential delicate flavours of apple and lemon that will pair with a very delicately flavoured fish. For something fresh and sparkling turn to Vinho Verde. |
