Wine Pairing In DepthClassic pairings for all game birds are an earthy Pinot Noir, especially from Burgundy and old world Europe. Burgundy Pinot Noirs tend to have flavours which tend to mimick the gamey flavours of the meat with the likes of plums, mushrooms, soil and a barnyard taste. Pinot Noir from Oregon also stands well beside the game birds. Nebbiolo goes well with mushroom based sauces as does an earthy Pinot Noir from Europe.
For white, Chardonnay and Sauvignon Blanc are the go to wines. Sauvignon Blanc is both dry and crisp with high acidity and lemon citrus flavors which pair up well next to a game bird. The Chardonnay's creamier aspect and nutty tendencies fit in well with the gamey, earthy flavors of wild bird.
