THE PROGRESSION OF WINE TASTING
Firstly, if you will be tasting several wines in an evening, there is a specific progression to the wines. The light and sweet always go first progressing into the heavy and dry. You would start with your sparkling wines, follow up with your light bodied, light coloured younger whites, moving to the medium bodied whites and passing through the full bodied, older whites to drink your oaked whites last. This should end the whites.
You then proceed to your rosés, which are the same grape varieties of reds but without dying from the grape skins. You then embark through your young, light bodied, light coloured reds, followed by your medium bodied reds and finishing the reds off with the older, darker, fuller bodied reds. You would always wish to taste your dessert, ice and fortified wines last.
