BOTTOM OF THE BOTTLE:
Quite definitely a rich luxurious tasting wine. This is a wine i would bring to a dinner where I want to make an impression. Especially if larger amounts are needed since I could only find it in 1500mL bottles. This baby is balanced and silky soft but quite noticeable in tannins. If the astringing dry bitter pucker of tannins isn't your thing, this might be the wrong match for you. However, with food the tannins tone down a bit more and come out quite balanced. I would definitely recommend this wine to those who enjoy a medium body red with higher tannins and those dark bitter chocolate and coffee hints along with sweetness, but sweetness that plays a supporting role to the bitter highlights. This pretty much goes well with anything charred by flame in my mind. I think it would also fit the bill for sweet fruity and chocolate desserts as well as strong firm cheese.

 BACKGROUND:

There are days when you just need a drink, A large and potent drink. A day such as this arrived for an individual close to me, and she responded by buying the biggest bottle of wine she could find for a descent price. She enjoyed a healthy serving of that bottle but it would not be polished off that evening and would not be polished off by her. No, that would be the task bestowed upon me the next evening. And it would be a glorious task! I had heard good things about Con Sur but I have never endeavoured to purchase a bottle. I was thankful to have such a bottle thrust into my grip! 

BASICS:

This playful stress crutch is a 1500mL (1.5L) 2012 Cabernet Sauvignon-Merlot Blend by Con Sur Tocornal out of Valle Central Chile. It contains a 12% alcohol experience and usually comes in at 15.99$ but at the time was on for 14.99$

AMATEUR"S EXPERIENCE:

APPEARANCE:
The colour reminds me of dark cherries. Think of a deep dark cherry when it is perfectly ripe, even slightly overripe. Plump, lush, richly inviting. In lower lighting it gives off the impression of a dark blood red, bordering on black with the tinge of ruby red along the rims. After the essential swirl, the legs would have me gather it a medium body.

NOSE:
That appearance did not lie. Super rich nose. The fruits actually take a back seat to more dark bitter chocolate and dark roast coffee bean aromas. The fruit aromas are of dark fruits, mostly dark cherry and blackberry. There is a hint of something sweet, maybe honey. Then there is this almost smoky oaky, tannin linger on the nose. I'm not even sure if this wine is oaked. I only know that the tannins comes through quite well as oakiness. One thing i do notice is that these aromas are so thickly rich and sweet, there is little foreshadow to the alcohol in the nose. 

PALATE: 
Smoked cherries come across on the initial palate. By smoked cherries I mean the astringing pucker of tannins and the sweetness of dark fruits. The sweetness has trouble keeping up with the high tannins but there is good balanced by an equally high amount of acidity. I definitely taste bitter dark chocolate and that same oakiness that came through on the nose, perhaps due to the high tannins. The alcohol that was not noticeable on the nose, was most definitely present on the swallow, giving a nice warming quench on the throat and chest. The after taste holds toastiness of burnt bitter chocolate and a very noticeable dryness of the tannins. 

WINE FOOD PAIRING:

I started this one on its own. The tannins were beautifully intense and the acidity was descent. Then I added in a burger and the burger helpfully tamed those high tannins bringing out the wine's silkier sweet side. The bottle recommends this wine for both "red and white meats, savoury casseroles, pastas with tomato sauce and ripe cheeses."  Hell, i might add dark berry fruits to this list along with dark, rich moist cake. If I had a cheese sampler I would pair this with those really strong and pungent hard cheese. This would go most pleasantly with a steak, charred roast beef or even a charred chicken. It can most definitely handle the gamey flavour of wild game meat and the high tannins might help soften the meat. If having some sort of BBQ kabobs where the peppers and onions char a bit, this might go well. I'm pretty sure the theme is char foods.
